Ingredients For Biryani Masala

Cloves 1 tbsp
Cardamom 1 tbsp
Cinnamon sticks 4nos
Nutmeg 3nos - (jarvirti)
Mace 3nos - (jaiphal)
Cumincaraway seeds 1 tbsp
(shahi jeera)
For Potato

3nos potatoes medium cut 6nos
Turmeric powder a pinch
A generous pinch salt
Mix it well marinate for 30 mins
For Marinate Chicken

1kg chicken
Ginger and garlic paste 2 tbsp
Lemon juice 1 tbsp
Yogurt 1 cup
Kolkata biryani masala 2 tbsp (before blend it)
Kashmiri chilli powder 1 tbsp
White pepper powder 1 tsp
Hot chilli chopped 1 tbsp
Ghee 1/8 cup (around 30ml)
Salt to taste
Mix it well all ingredients
Marinate for 1 hour
Ingredients For cooking chicken

Oil 1/3 cup (around 80ml)
Onion sliced 3 medium
Bay leaves 3nos
Eggs 3nos
Hot water 1 cup
For Rice boiling
----------------------------
Basmati rice 2.5 cups (Soaked before 30 mins)
Cinnamon sticks 2nos
Cardamom 5nos
Cloves 5-6nos
Salt 2 tbsp
Cooking oil 1 tbsp
For Dum Layer
----------------------------------------------
A pinch Saffron, rose water 2 tbsp
Warm milk 3 tbsp (soaked)
Fried onion
Ghee 1/4 cup around 30ml
Cover and cook 30 mins on low heat.
Mixing well before serve.
