Chicken Dum Biryani with homemade secret biryani masala recipe
For Homemade Biryani masala –
• Bay leaf - 5 nos
• Dry red chili - 2 nos
• Black peppercorns - 1 tsp
• Cinnamon stick - 2 -3 pieces
• Black cardamom - 4 nos
• Green cardamom - 1tsp (12-15)
• Cloves - 8 nos
• Star anise - 3 nos
• Mace - 3 nos
• Whole nutmeg - 1 nos (small)
• Coriander seeds - 1 tbsp
• Cumin seeds - 1 tsp
• black cumin seeds (shahi jeera) - 1 tsp
• Fennel seeds - 1 tsp

For chicken Marinating -
• Chicken - 1000 gm
• Curd - 400 gm
• Oil - ½ cup / 125 ml
• Green chili paste - 1.5 tbsp
• Ginger - 1.5 tbsp
• Garlic paste - 1.5 tbsp
• Turmeric p/w - 1/2 tsp
• Red chili p/w - 1 tsp
• Coriander powder - 1 tsp
• Biryani masala - 3 tbsp
• Fried onions - 1/2 cup
• Kasoori methi - ½ tsp
• Mint leaves - handful
• Coriander leaves - handful
• Ghee - 2 tbsp
• Lemon - 1 no
• Salt - as required
For rice
• Basmati rice - 4 cup
• Water - 2 ltr
• Salt - 2 tbsp
• Ghee - 2 tsp
• Bay leaf - 1 no
• Star anise - 1 no
• Green Cardamom - 3 nos
• Black cardamom - 1 no
For assembling -
• Saffron milk - 1/4 cup
• Water from Blanched Rice – 1/2 cup
• Fried onion
• Mint leaves
• Coriander leaves
• Kewda essence - 2 -3 drops
