Ingredients:
Chicken Marination :
1/2 kg Chicken (medium cut)
2 tbsp Cashew nut Finely chopped
2 tbsp Pista nut, Finely chopped
2 tbsp Almonds / Badam, Finely chopped
1/4 cup Heavy cream
1 tbsp Ginger garlic paste
1/2 cup Yogurt / curd
2 tbsp Mint, Finely chopped
2 tbsp Coriander, Finely chopped
2 nos Green chili, slit
1 tsp Coriander powder
1 tsp Roasted cumin powder
1 tsp Garam masala powder
2 tsp Chili powder
2 tsp Salt (as required)
1/4 tsp Turmeric powder
1/4 tsp Cardamom powder
1/4 tsp Black Pepper powder
1 tsp Shahi jeera / black cumin
whole masala:
1 no Star anise
1 inch Cinnamon
5 to 6 nos Cloves
1 no Bay leaf
1/4 cup Oil
1 tbsp Ghee
1/4 cup Fried onions
1 tbsp Saffron water ( pinch of saffron soaked in 1 tbsp hot water)
For Making Biriyani Rice:
2 cups Basmati Rice (rinsed)
2 liters Water
1 inch Cinnamon
4 no Cardamom
4 nos Cloves
1 tsp Shahi Jeera / Black cumin
1 no Star anise
2 Bay leaves
1 no Mace
2 no Green chili, slit
1 tbsp Ginger garlic paste
1/4 cup Salt
1 tsp Lemon juice
Layering Biryani:
1 tbsp Ghee
1 tsp Coriander and mint , finely chopped
2 tbsp Fried onions
1 tbsp Saffron soaked water
