 Malabar Biryani |Thalasseri Biryani |Kerala biryani |Chicken Dum Biryani|  |A very popular and unique biryani recipe originated in Thalasseri inthe Malabar region of  Kerala.It is made with a special type of rice Known as Kaima rice or jeerakasala rice.In the absence of this we can substitute it with Ambemohar rice.A special.home made biriyani masala is used in this recipe.


Ingredients 


For chicken  masala

Coriander leaves

curry leaves

pudina leaves

Turmeric powder_1/4 tsp

Fennel seeds_1 tbsp

shahee jeera _1 tsp

jeera_1 tsp

pepper cones _1 tsp

mace_2 

Nutmeg_ asmall piece

cinnamon _2 medium size pieces


For ghee rice


Kaima rice_1/2 kg  (2+1/2 cups in 200 ml cup)

( can substitute with ambemohar rice)

Boiling water_4+1/2 cups

Ghee_3 tsp

Whole spices  _ shahi jeera+ cardamom +cloves +cinnamon 

Onion_1/2

Salt

 Coriander leaves +pudina+curryleaves 

Biryani  masala_1/4 tsp


To make fried onion

Onion 1+1/2

oil_1/2 cup



Other ingredients


Saffron milk

Fried cashews and raisins

Lime juice
